This honey is usually produced by bees/aphid that collects nectar from trees, both conifers and deciduous and not from blossoms. It is also referred to as Honeydew.
It is rich in minerals, amino acids and oligosaccharides (high molecular weight sugars)
It resists crystallization comparatively because of high fructose and low glucose levels, as well as a low glucose to water ratio
It also has higher than average antibiotic properties due to higher levels of Glucose Oxidase which leads to the production of Hydrogen Peroxide
